Banana, cinnamon and golden syrup cupcakes


Today I decided to make banana cupcakes but it was really difficult to find a recipe which was suitable for what I wanted. I used this as a basis and developed upon it, skipping out the nuts and coffee and using grams instead of cups. I keep meaning to get hold of some American measuring cups but haven't got round to it yet. Anyway, I accidentally forgot to add the egg but it didn't seem to ruin them at all, I think that this was because the bananas were really, really ripe. They didn't rise as much as I'd have liked but I think that if I had added some more rising agent it would have been almost perfect.


Here is the exact recipe I used:

INGREDIENTS

·         4 over-ripe bananas, smashed
·         76g melted butter
·         96g sugar
·         1 tsp vanilla
·         1 tsp baking soda
·         Pinch of salt
·         192g plain flour
·         Pinch of cinnamon
·         1 tsp golden syrup

METHOD
1) Preheat the oven to 180°C. With a metal fork, mix butter into the mashed bananas in a large mixing bowl.
2) Stir in the sugar and vanilla.
3) Sprinkle the baking soda and salt over the mixture and mix in.
4) Add the flour, mix well. Then stir in the cinnamon and golden syrup.
5) Spoon mixture into cupcake cases (in a 12-hole tin). Bake for 25 minutes, checking regularly to make sure that it is not burning as it cooks a little faster without egg. Check for doneness with a toothpick inserted into the centre of a cake. If it comes out clean, they are done.
